Garlicky Asparagus

It’s asparagus time! We love asparagus at my house. What we don’t like is mush asparagus. You know, like what you get in the can. We’re close to a number of farms and markets and can get it in bulk orders. That way, I can blanch and freeze some. I’m not a fan of canning it because by the time you process it, you’ll end up with a mushy end product.

Here’s one of the asparagus recipes we use at my home.

Garlicky Asparagus

5 cloves of garlic smashed to release flavor
2 pounds of fresh asparagus
1/8 cup extra virgin olive oil
Freshly ground pepper (to taste)
Salt (to taste)

Wash off your asparagus and cut off the tough ends. Heat olive oil on medium heat. Saute your mashed garlic cloves in your olive oil for approximately 2 to 3 minutes to release the flavor of the garlic into the oil. Place your asparagus in your garlic flavored oil and saute until tender (about 5 minutes. The asparagus should be slightly crisp.
