North Carolina Style Crock Pot BBQ Pork

Barbecue is so different as you travel throughout the south. I have a fondness for Texas style BBQ but every blue moon, I get a strong craving for North Carolina Style BBQ. It has the tangy flavor of vinegar with delicious spices that will make you come back for more. Since I’m not in North Carolina I’ve gotta bring North Carolina to me. So here’s a “set it and forget it” recipe that’ll give you the flavor without the drive (or flight).

North Carolina Style Crock Pot BBQ Pork

1 4 to 5 lb pork shoulder or butt
1 cup of BBQ spice rub (recipe to come)
1/2 cup chopped onions
1/2 cup sugar in the raw (brown sugar will do)
1/2 cup vinegar
Red pepper flakes (to taste)
1 tbs liquid hickory smoke (optional but makes a HUGE difference in flavor)

Rinse and pat dry your meat. Rub on all sides with your favorite BBQ spice rub. Place the meat into your crock pot and set it on low. Cook the meat (6 hours to overnight). Pull the bone out and discard. Add the sugar, vinegar, liquid hickory and red pepper flakes and mix well. Let simmer on low another few hours. You could actually do this part before work and leave it until the evening. Turns out great! Serve on buns with slaw or corn salad (see my pic) and enjoy!
